Creamy Tomato Soup

When there is a chill in the air, I crave a steaming bowl of soup. Creamy Tomato Soup is one of my family favorites! It’s perfect for lunch, dinner or a snack. Serve it up alone or with a grilled cheese sandwich on the side (the way my family likes it). It’s a super easy recipe for any mommy! Make sure you have an immersion blender on hand to easily puree your soup and be careful of those blades!Coat the bottom of a large pot or Dutch oven with olive oil over medium heat. Add the diced onions and stir coating them with the olive oil. Continue this process for approximately 5 minutes or until the onions have become translucent. Lower the stovetop’s heat and pour in one quart of chicken stock. Add the can of crushed tomatoes and bring the soup to a boil.  Reduce the heat to low and add the cup of heavy cream and your fresh basil. Season your soup with salt and pepper and bring it back to a boil. Remove your pot from the stove and using an immersion blender, puree your soup. You can add additional chicken stock or water for desired consistency. Top your soup with croutons or shredded cheese of your choice.

Ingredients:
3 Tablespoons of Olive Oil
1 Onion, diced
1 28 Ounce can of Crushed Tomatoes
1 Quart Chicken Stock
Salt and Pepper
10 -20 Leaves of Fresh Basil
